Ok. I found that the (Reset) option on each page has not yet been implemented, so I un-installed and re-install Jaikoz thinking that it would revert to all defaults. No cigar.
Un-installing and re-installing does NOT reset the defaults. So my question is, how do I reset all defaults in Jaikoz?

(It is implemented but it broken), you need to delete the settings.jai file in your user folder as follows:
OSX
Go to Home : Library : Preferences : Jaikoz
Delete settings.jai
Start Jaikoz
Windows Vista:
Go to C:\Users\username\Jaikoz
Delete settings.jai
Start Jaikoz
Linux
Go to $HOME/Jaikoz/Prefs
Delete settings.jai
Start Jaikoz
