Could you tell me if is it possible to create a M3U playlist selecting the songs directly in Jaikoz after updating tags etc; ?

No not directly, but you can drag files directly from Jaikoz to somewhere and then make a playlist from there, you can also use Advanced/Export to export the filenames and metadata of the selected songs, then you could convert this to a playlist.
