Ampersands to "and"

What rule is it that is always changing an ampersand to the word “and”? I don’t really want that to happen all of the time! Also, dashes are removed it seems, and I’m not that keen on that either. Is there some place where I can disable these changes without totally turning off local correct?

The default Word Replacer changes ‘&’ to ‘and’ and removes ‘-’ and ‘_’, you can edit this in Preferences/Manipulators?word Replacer.
